Butternut Squash and Wicklow Bán Quesadillas

It’s Autumn and the lovely orange butternut squash is in bounty! I love it’s sweet and nutty flavors and I’ve mixed it into some gorgeously creamy Irish brie Wicklow Bán Quesadillas. These Butternut Squash and Wicklow Bán Quesadillas are an Irish twist on a Mexican Classic! Seasonal squash with creamy Irish brie is a delish combination!

 450 g or 1/2 a butternut squash, peeled and cut into chunks
 2 tbsp olive oil and extra for frying
 1 tsp sage and thyme
 1 pinch white and black pepper
 1 pinch salt
 Good handful spinach
 Small bunch coriander
 Good handful white cheddar
 75 g Wicklow Bán, sliced

Preheat oven to 220C. Throw the butternut squash along with the olive oil, thyme, sage, pepper and salt onto a baking tray. Mix well and bake in the oven for about 25-30 minutes or until dark on the edges and soft when pierced with a knife.

Allow the butternut squash to cool then mash on the tray with a fork. Scrape to one side of the tray and roughly chop the spinach and coriander on the other side. Sprinkle over some more salt and black pepper and mush the spinach, coriander and butternut squash together and divide into 4.

Heat a frying pan on low to medium and addma little oil. Spread the mashed butternut squash mix on 4 tortillas then lay the Wicklow Bán on top and scatter over the cheddar. Sprinkle with a little more salt and pepper and place another tortilla on top.

Cook the quesadillas nice and slow for about 5-10 minutes or until the cheese is lovely and melted. Flip halfway through so each side gets nice and golden.

Cut into 4 and serve with a spiced apple chutney or light salad.

Their ‘Super Batata’, a mixture of roasted sweet potato, Jack cheese, sour cream and coriander is absolutely delicious…  To go the extra mile I always go with a side of corn and zesty salsa and guacamole – Yum!
