Prune & Orange Winter Breakfast Pot

When I think of this breakfast pot my mouth salivates and I become real happy inside! The combination of sticky rich prunes with fresh orange is knock out and when layered together with lovely light coconut yogurt and warming Cinnamon Granola it becomes one of the most delicious quick breakies you can get into you! Full of fiber, easy to make and great on the go, this is a brilliant way to kick start any day…

Easy to make 4 ingredient (prunes, orange, granola & coconut yogurt) breakfast pot. It's GLUTEN & DAIRY FREE, easy to make and great for on the go!

 50 g or handful pitted prunes
 1 Large mandarin orange, juice and flesh
 7 tbsp coconut yoghurt

Roughly chop the prunes and throw into a small bowl. Slice the orange in half and squeeze the juice in on top of the prunes. Scrape in the flesh and try to leave behind the white parts as this will be quite bitter. Mix and squeeze together, cover with cling film and leave in the fridge overnight.

In the morning layer the prunes, coconut yogurt and granola into a glass jar or plastic tub like so - 2 tsp orange-y prunes, 3 tbsp coconut yogurt, 3 tbsp granola. Repeat once more. Add final 2 tsp orange-y prunes, 1 tbsp coconut yogurt, 1 tbsp granola. Simple!
