Epic Real Deal Hot Chocolate

I’ve tasted what can only be described as real deal hot chocolate on a couple of occasions.Β The first time was years ago while I was on a family holiday in Switzerland. We were in St. Moritz and by god I remember just how cold it was… The place was covered in layers of thick white dusty snow and we needed something to warm us up!

We stopped at a cafe and ordered hot chocolate. I presumed it would be just like ‘home’ but it couldn’t have been more different… It was almost as if they had just melted a bar of wicked quality chocolate, mixed it with a splash of milk and poured it into a lovely cup… I remember just how dumb founded I was… What a revelation I thought, but half way through I had had my fill. Never did I think I would leave a drop of hot chocolate behind but in all honesty the half a cup I drank was more than enough! Rich and smooth it was the real deal but something to savor as opposed to gulp down…

The second occasion was when I worked in the south of France in the Four Seasons hotel. I was working in the room service at the time. I remember that rectangular lunch box size plastic box that was delivered to us from the pastry section every other day. From the outside you could tell there was something brown inside and when you opened it up you were wafted with the most gorgeous of all chocolate where a thick rich hot chocolate mixture sat firmly. This made a stunningly rich hot chocolate, whisked with a little warmed milk it was heaven!

So years on and lots of other ‘fake’ hot chocolates later, I’ve come up with my very own version. It’s my go to when I’m in need of warmth and a chocolate hug. There’s a nice balance of milk and dark chocolate which means you can drink the lot before falling into choco-coma. I don’t drink regular milk so I’ve went for a mixture of soy and rice which adds a lovely lightness but feel free to use whatever you fancy!

 150 ml soy milk
 150 ml rice milk
 60 g good quality 50% milk chocolate
 40 g good quality 70% dark chocolate
 Handful marshmallows

Over a low to medium heat, bring the milk to a gentle simmer. Meanwhile bash the the chocolate with a rolling pin.

When bubbles start to form at the edges of the pan add in the chocolate and remove from the heat. Allow to melt for a minute, place back on the heat and whisk vigorously until beautifully frothy.

Divide between 2 small cups. Top with marshmallows and more chocolate if you wish and slurp to your hearts content!

 60 g good quality 50% milk chocolate
 40 g good quality 70% dark chocolate
 Handful marshmallows
