Easy Cinnamon & Nutty Gluten Free Granola

This gluten free granola is going to knock your socks off! It’s packed to the brim with oats, nuts and seeds which are great sources of fiber. It’s nutty and filling with the loveliest hint of Winter and warmth from the cinnamon and mixed spice. It’s gorgeous as cereal with your favorite milk, on top of porridge or scattered over some yogurt! Get your breakfast game on with this super easy granola!

Wet
 125 ml extra virgin coconut oil
 120 ml agave / maple syrup / honey (if not vegan)
 1 tsp vanilla extract
 1 tsp mixed spice
 2 tbsp heaped cinnamon
 1 Large mandarin orange, juice of
Dry
 500 g gluten free oats
 150 g pecans
 150 g walnuts
 150 g hazlenuts
 50 g mixed seeds – sunflower, pumpkin, linseed, sesame
 1 pinch sea salt

Preheat the oven to 150C. Over a low to medium heat, melt all of the wet ingredients. Give it a good whisk to melt it all together. Shuffle all of the dry ingredients in a big bowl.

Pour the liquid deliciousness over the oat and nutty mixture. Use a spoon to give it a good stir and make sure every last bit is coated and kissed!

Spread over two baking trays or dishes and bake for about 45mins – 1hr. Take the granola out of the oven every 10 – 15mins and give a good shake and stir to ensure every bit gets nicely toasted!

Leave to cool and store in an airtight container for up to 1 month - if it lasts that long!

BEST WAY TO KNOW WHEN IT’S DONE

Each oat should be golden in color. If you have a jar of uncooked rice or lentils, place a spoon bang in the middle and stir. Listen to the sound of each grain touching off each other – your granola should sound like this when it’s done!
