Broccoli, Sweet Corn and Spinach Fritters

I call these green goddess fritters with a pop of sweetness! A combination of gorgeous broccoli, spinach and sweet corn, they are super easy to make and taste superb! I love having them mid week when I’m really busy and need something healthy that’s quick and tasty…

You’ll need a food processor or blender to make them in minutes but if you haven’t got one then just chop up the broccoli, sweet corn and spinach as finely as you can then mix with the remaining ingredients.

 1 can sweet corn
 75 g or 1/4 small head broccoli, cut into chunks
 Good handful spinach
 1/4 small red onion
 1 Large egg
 65 g gluten free or normal self raising flour
 1 pinch salt and pepper

Drain the sweet corn and then throw into the food processor. Remove 2 tablespoons and put back into the can, we’ll use them in just a minute.

Trim the bottoms of the broccoli and give it a nice wash. Cut into chunks and throw into the food processor along with the spinach, large egg, self raising flour, onion, salt and pepper.

Blend on a low speed to a puree consistency. Mix in the 2 tablespoons of sweet corn which is gonna add pops of sweetness and lovely texture. Remove the blade and scrape the mixture to one side.

Place a non stick frying pan on medium heat and drizzle in a little oil. Spoon 2 heaped tablespoons of the batter into the pan and spread gently to a burger size patty. Fry for 2 minutes and flip over. For lovely fluffy fritters don’t squish down as we want to keep all the air inside and fry for a further 2 minutes or until nice and golden brown.

Broccoli, Sweet Corn and Spinach Fritters

These fritters go really well with a light salad and black pepper, coriander and lime mayo dip for lunch or with mashed potatoes or a baked chicken or salmon filet for dinner. They could even be a breakfast show stopper, topped with a poached or fried egg and some smokey bacon for good measure!
