Fluffy Banana and Chocolate Pancakes

If like me you’re a sucker for pancakes then these fluffy banana and chocolate pancakes are gonna put a big smile on your face! I’ve made pancakes every week and sometimes more than once during the week for the past few months on a mission to create the best pancakes I’ve ever tasted. Totally gluten free and ridiculously easy to make this recipe is suitable for kids and grown ups alike. A thing of pure beauty, they are crisp on the outside and airy fluffy chocolate banana heaven on the inside!

 1 Large egg, separated into 2 medium sized bowls
 200 ml or 1 cup rice milk (or whatever milk you fancy)
 1 drop vanilla extract
 190 g or 1 + 1/2 cups gluten free self raising flour (or normal self raising flour)
 1 pinch salt
 1 Medium banana, sliced thinly
 40 g chocolate chips
 Oil for frying

Whisk the egg white until nice soft peaks form.

Mix the egg yolk, rice milk and vanilla extract together and then add in the flour and salt. Whisk to combine. Gently fold in the egg white to keep all that lovely air.

Heat a large non-stick frying pan on medium heat. Add in a splash of oil. Fill 1/2 a ladle with the batter and pour into the frying pan.

Scatter over a good pinch of chocolate chips along with 5 pieces of banana and gently mush down. Drizzle a teaspoon of the batter over the banana and spread without pushing down. Leave to fry for less than a minute or until the bottom is nicely golden brown. Carefully flip and without pressing down (this will squeeze out all the air) leave this side fry for a further minute.

Banana and Chocolate Pancakes

They are gorgeous with a nice drizzle of maple syrup or honey, more banana, chocolate and toasted pumpkin seeds.

If banana and chocolate isn’t your thing then dream up some different combinations… Here I’ll get your started – how about apple, toasted pecans and cinnamon or white chocolate and cranberry with a cheeky zest of orange?!
